I was discussing GPs with a couple of SOF builders in the North Island of NZ(Pete posts here) a few days ago. When I suggested that wood it was pointed out the it would soak up water like a sponge. I suggest you seal it well. I was also suggesting to them that if I used it I would put a spine down the centre of the paddle and reinforce edges and tips. Probably use kwila for those pieces.
I'd be interested to hear of your results as it is a super light wood.
