My hatch covers are curved and a wee sprung (they don't lay flat), I've got stainless steel screw /SS hinge set-up that're pretty strong (but too ugly to dare show on a website children and craftsmen may be present). the stainless steel is not impervious to the ocean, too many parts, too many sealed SS parts (no air or water) will corrode. My handles keep detaching from the screw shafts.

I like these Dzus fasteners. I like the quarter turn, the spring retention, the lock. The ones with knobs instead of screw heads would work. Tolerances need to be looser for kayaks. Perhaps resin parts replacing some of the metal parts.
