hi,
you might also consider the need to add a rudder later on - this requires some room for the pedals and so the bulkhead can't be the support, but some padding is needed to reserve this space.
obviously, if the kayak is very narrow and the deck very low, pedals never can be an option and you can bring the bulkhead all the way back, as in this case you need every inch of that low and narrow storage space.

ps. i did the latter on my shortened Njord, and although i'd dearly love to put in a rudder, there is no room for the pedals - 50 cm wide and low foredeck.
so some times there are no options, some times there are.
