Hi Malcolm,
I live in the opposite climate and I am always heating my epoxy to get the right viscosity and kick off. This is just a theory, but why not cool the epoxy/hardener in a refrigerator to slow the kick-off? I know the boat will be warm but, the cooler epoxy will probably kick slower. I am not sure my theory is valid, but a simple test could confirm.
