In the biggest waves you expect to meet ? Or in strong cross-winds ?
Maybe I'm just paranoid on your behalf - a lot of my paddling is in
waves and rocks where either an immediate roll or a towed rescue are
the norm - you can't hang about doing re-entries in six foot swell
among big rocks :-)

But it's a useful point - if you don't have a second and less stable boat
to push the envelope in, then paddling very close to cliffs where the waves
reflect and form clapotis is also good for your reactive skills and balance.
Pick rocks which fall sheer into the water so you don't get dropped onto
rocks and stranded in an unstable position. Tide races are also good places
to practice, since, unlike bad-weather roughage, they tend to carry you into
calmer water eventually, where you can reenter more easily. But avoid ones
which take you into places which are more exposed or from where it will be
difficult to paddle back to a shore !
