Personally I'd recommend doing the first paddle with solid wood if you can. It's just easier to carve one piece. The laminated paddles are probably better long term but each piece of wood behaves slightly different from the one it's laminated to and can cause difficulties with carving. Once you've done a couple this won't matter as much.
