Good wood for a greenland paddle would be something that will give you a straight and strong paddle. Usually a knot free board will do this. A quartersawn board will be easier to carve and will provide more strength than flatsawn. Your on the right track. Enjoy the carving. Your next paddle will be easier to do and it will turn out nicer. You can't make just one.
