I'd agree on using Balsa; the nice thing about wood is the way it helps you get a fair hull, and Balsa comes in a range of densities too.

Reading the posts, I had a thought. Has anyone tried making a 3 layer sandwich of foam with whatever surface veneer turns you on? Kevlar, glass, carbon, whatever. It should have similar properties to marine ply so you could use standard wood boat build practices, and maybe give more uniform thickness. Just a thought ...
