A coaming recess needs to drain to the shear. The rear of the coaming is the lowest. So why not just make a cockpit recess so the top rear of the coaming is at the height you want for rolling. I think a recess in a recess is extra effort and would rather have the rear of the coaming flat side to side matching a cockpit recess than peaked in the middle in a coaming recess to match a radiused rear deck.
