My kayak uses white pine for the accent lines. The only problem is white pine turns dark yellow to even orange when wetted out, and when exposed to UV. The best thing would be very clear white cedar, ash, or best of all holly, but you won't find holly pre-milled. You would have to have the coves milled or mill them yourself. The 1/2" bead-and-cove strips leave a thin line because the bead takes away part of the thickness. The deck is made using two 3/4" strips of Western Red Cedar, followed by one 1/2" strip of Atlantic White Pine, and so forth, and so on.
