Technically it is possible, but you lose one of the big advantages of making a female mould off the wooden kayak and then laying up the glass inside the hull.

When you do it that way, the finish is automatically as good as the finish on the wooden plug, more or less.

Using your suggested technique, there would be a lot of extra work needed to create a surface that would look acceptable and not have a lot of drag.

It might be nearly as much work as building the female mould, although it would require less glass and resin to do the job.
