It's an interesting idea but unless the design were quite narrow, tipping it to once side would tend to make it taller and perhaps more difficult to work on as most boats are considerably wider than they are deep.
Anymore I just use my cheapy laminated (bolted together) multiple 2x4 stronback. It was seriously cheap and easy to make and has worked just fine on several boats now. Was designed to be able to knock it down for storage, but I've not done that yet, probably should have just glued it all together.
