Seeking: Cockpit "Fit"

I am a very novice paddler so I can't adjust the "fit" of the Guillemot cockpit from experience. I will take the location of the cockpit from the plans but many say that the width can vary 1 or 2 inches and the length can also vary.
What measurements should I take to get the cockpit to fit me?
