Hi Ned,
I think most cockpits are sized to accept commercial spraydecks, keyhole or ocean. There is some variation between makers in exact dimensions. I recall seeing a list of cockpit sizes and which companies fitted which size but can't recall where on the net.
Go with the size on the plans and find a spraydeck to fit.

Though, fit isn't so much the dimensions of the cockpit and coaming as how you pad out the inside of the kayak so you don't move around too much.
