Congrats on a cool kayak. The smile on your daughter's face is priceless!

I wonder if you could just turn the outrigger frame around so that the widest bar is at the aft-most....The floats would probably be 'backwards' but should still work... That might get the floats back out of the paddles way.
Those Sea Fleas are so stable, and kids pick up the skills and balance so quickly that the outriggers will soon ne unnecessary!
