I am speaking slightly out of experience, as I've never built a strip boat, only S&G, but I think my recent recess building experience may lend some guidance. As long as your top outside edge mates up tight, you are golden, and can hot glue a little bit on the outside. By that, I mean that you can over bevel the inside section. Then, once you've finished the recess strips, you can create a small fillet on the under side of the Deck, filling any spaces. This allows you to be slightly less precise, and believe me, unless someone is inspecting the inside of your cockpit area with a mirror, no one will be the wiser, not to mention you might need the fillet anyways if you are glassing the inside~
