The biggest problems will be heat, the epoxy surface is not high heat resistant and no finish applied on top of it will fix this. Putting a hot pan on the counter will soften the epoxy enough to leave a permanant mark. Second problem is the epoxy takes quite a long time to fully cure and will be food toxic until that happens. I'd want at least 2 months of cure before I'd use it, would be an awful long time to not be able to use the kitchen.
