Just build it!!
If your boat is a "learning" boat, then go cheap and skip the marine plywood and look for some void-free 5.2 mm ply for $15 for 4x8.
Skip scarfs. Butt joins are fine. I just taped the seams on my Guillemot S&G... even quicker and easier than butt joins.
I bought cheap, off-brand epoxy on ebay, and I was delighted with the results. Glass too!
I learned everything I need to build a fleet of boats, and I am well on my way to hopeless boat-building addiction. My S&G ended up a little heavy, and a little homely, but these are flaws only I can see.
Just build it!
The Guillemot S&G is a fabulous design. I have the form ready to build for the Guillemot stripper, but it has been hanging around for a couple years because I have so much fun paddling the S&G. The stripper is coming soon.
