S&G: Free plan Guillemot... design(?) queery

I paddled one of these today and really quite liked it.
Can you tell me why it "slaps" down on waves/chops (presumably instead of cutting through) and do i lose forward motion because of this "slapping" down?
Are there pros and cons to "cutting through" waves versus "Slapping down" on them?
I ask because i am considering making one in the new year
