It can certainly be done, although most often accomplished in composite materials. I've seen a take-apart cedar and canvas canoe online (can't seem to find it again right now) and one 3-piece kayak ( http://dashpointpirate.typepad.com/the_dash_point_pirate_woo/2008/06/secret-kayak-project-x-revealed-at-sstiks-2008.html ).

Scaling things up to 30+ feet will, no doubt, present some additional challenges... :)
