I too was going to suggest the Squeedunk Cormorant. I built one several years ago for a friend, and I was very pleased with both the way the hull went together and how the finished product performed. The Squeedunk design page offers two deck versions, a cambered (arched) deck, and a four-panel style (like Pygmy Coho and others). There is no specific info on cockpit or hatch construction---this is not a how-to-build, just a hull/deck plan with clear and precise offsets, but like I said, it's a very good kayak. I used a different method for the deck, with shear clamps, flat decks fore and aft of the cockpit, and a central raised ridge from front of cockpit to front bulkhead (like Pygmy Queen Charlotte, for example). Good luck whichever design you choose.
