Two things to add. Surf skis are designed to surf, part of the name, basically sliding off the tops of waves, the long waterline allows skis to reach speeds that a paddler would never reach in flat water doing this. A 16 footer will squat and drag the stern if you try to do this. Also skis are SOT kayaks, you have to have some measure of extra stability or they are horribly unstable in flat water taking so much time bracing you lose speed. Everything is different if you're not sitting below the waterline like you do in a sit in kayak.
