Hi Vic. If by overlap you mean the tape overlap at the deck hull join, then an inch or perhaps a little more is enough.

Why not use a bead of thickened epoxy to do this?

My opinion, a fillet where necessary and 2 inch tape is plenty. First timers tend to overbuild.
