I can tell you that trying to carry a sheet of 1/8" on a roof rack the modulus of rupture occurs at around 28 mph. Much lower than I had calculated for when tying it down!

All kidding aside, I think this is what you are looking for, although it does not specify what type of wood the ply is. I would think either oakoume, mahogany, or spruce, as that's what most of the stuff I have seen in aircraft grades.
