Hi Brian,
I built my first stripper in an outside carport and the hull was glassed and filled with three layers of System 3 epoxy at 4C or 40F. Gave it at least 3 weeks before sanding and everything was fine. Only drawback was darker colouring than when epoxy was poured at room temp. Your probably right that the cooler temps need more curing time.
