I suggest the Florida Keys. I don't have any recommendations for outfitters but I'm sure you can Google and find some. The reason I say the keys is you have nice beaches, beautiful flat water, and flying into MIA is usually cheaper/less miles especially if you fly American Airlines because it's their LAC hub. You could rent a car and drive to the Keys in one afternoon. There is a lot of bird life in the backwaters. You could paddle to the southernmost point in the continental US!
