Hi Scott - The easiest thing to do (and we did this) is to remove the floorboards and sit directly on the skin and keel. A little padding on either side of the keel helps keep the wooden thong effect to a minimum . . . .
Sure, there's some skin distortion when sitting like this, but as long as I can't see it, that's OK with me!

Without taking the skin off, that's about all you can do (other than outriggers!). If you do take off the skin, then perhaps the easiest thing would be, as you say, to epoxy on an extra board to the chines, well faired in from about say frame 2 to frame 5. If it protruded below the chine, too, then you could both widen the boat and decrease the deadrise around the cockpit area, and this would likely make it somewhat more stable.
It sounds workable, but . . . ?
I'd just build a different boat, though - but that's something I like to do.

I'm interested to see what you do, if anything, and how it works.
