Sounds like you have it under control. I build some furniture and I have found that once wood is dried (as in not green) it usually done warping. Sometime when you resaw it will release some uneven tension and warp. Also, if you get one side drier than another it will warp on you. I have heard of wood being cut and laid on a bench top. The next day it would be warped because the exposed sided dried out more and the face on the bench couldn't dry as quick. That sounds like what happened in your case, wet side and a dry side. Once they even out they go back or close to the way they were. Sometimes they just don't go back to shape but maybe in your case it will.
