Call me old school but I buy an old Stanley or whatever and just flatten the sole and sharpen the blade. I can buy several of the price of a new LN. Not that they are not fine tools! But I find the old ones work just as good and I would rather have 3 laying around then 1. And if I do drop and break one I don't cry about it. So far I haven't do that either.

As for the adjustable mouth I find it moderately useful. I think most of don't know how to take advantage of it though. Not sure I do frankly. But if it is just a few bucks I would spend it. if your buying new it's such a small amount compared to the price of the plane.
