Eric,

I've never built a sof kayak, but I've used waterborne finishes on a couple of strippers. DON'T DO IT!! Waterborne finishes have their uses, but they don't belong on a kayak. The waterborne polyurethanes I used on my kayaks turn cloudy white when they stay wet for a while. I used Varathane Diamond Spar Urethane, and Crabcoat from Crystalac. The Crabcoat isn't as bad as the Varathane, but it does get cloudy white on the coaming where my skirt keeps the surface wet. I'm getting ready to refinish my OOK expedition with automotive clear coat; we'll see how that goes.
