Btw, I would recommend not making the cockpit any larger than a standard keyhole in size. There's not much point in building a great handling kayak then limiting it's use because you have no connection to it in a too loose cockpit.
Standard size keyhole is something like 16 1/2" wide by 31" long (I think).
