Something similar happened to me. My boat was off the forms when a bunch of water leaked on it, warping the stern area. I considered popping the seams and replacing the strips, but I decided on fixing it. For the most part it all turned out fine, but some of the strips ended up getting sanded pretty thin during my efforts to fair it all up. What I plan on doing for the thin strips is to glue a strip to the back of the thin strip on the inside of the boat, and sand or plane it flush. I got the idea from Nick's book.
For the strip you sanded through, I guess you should pull the rest of the strip out and put a new one in.
