There are plenty of stapleless methods that would work.. Hot glue 'stitches' on the outside, bungy cords around the whole boat etc. You could also be inventive and make up some 'halo' forms to brace/clamp from.

Separating the new hull from the old shouldn't be too hard - I'd start by wrapping the original hull in some pallet wrap film - it's really thin, and sticks to itself (and anything else smooth) without leaving anything more than trace amounts of sticky on removal. That will keep glue/epoxy off the original hull.

For the sake of discussion, we could perhaps assume that you're using a boat of your own design as the form - you haven't said otherwise.
