You sound like your taste is similar to mine. I love the flat deck on my Curlew. There is just something about the look of it.
More vertical ends mean a longer water line and a higher hull speed. But you have to be strong enough to take advantage of it and I suspect the difference in the same boat would be so small you wouldn't be able to tell any difference. As for being wetter I have no experience there but I suspect how much flair it has would be more important than the the angle. In a powerboat that flair will deflect the spray and I would suspect the same would apply here.
I just finished up my first multi-chined design, Long Shot, and I am totally impressed with the rounded chines. When I designed it I worked to keep the resistance low and still maintain the stability. I found a big improvement when I went from hard to rounded chines. So far I am very impressed with this boat. So if it were me I would probably go with rounded chines.
