You've put all this work in, go the last mile.

I always tell people, strip building is like a marathon, you have to save some juice for the finish.

Roll on TWO thin coats of epoxy. It will look like the boat's varnished. You will bury the glass you hit
and the boat will look better when varnished.

But then go paddle it for a while without varnish. A month will harden it up, you'll scratch it a bit.

Then you can sand with 120 then 220 and varnish and it will look great.

I don't care what anyone says, more then 220 (A GOOD JOB removing the 120 scratches) is waste of time.

Spar varnish was made to flow on a surface sanded to 220 and create a perfect gloss.
