Reducing the deck height won't make a difference, but reducing the beam can be a big deal. Luckily it's a SOF! There have been several threads here and/or the Qajaq USA forum that get quite technical about placing the cockpit locations on a double. We're very lucky that there are some excellent free modeling programs, so that should help. Figure it out, move your cockpits and a couple of deck beams, reskin, and you're good to go. If it were me that would be two weeks of figgirin' and a weekend of building, but if you just want to paddle it stick some containers of water in the bow.
No boat is perfect- the best you can hope for is that you'll reduce the number of errors to a point where only you can notice. This problem, though- NOT an issue. It's a bummer, but easily fixed. Imagine if it were a strip version! Oh, the heartache!
Just curious- did you do a saran-wrap test before you skinned it?
