An old standby with woodworkers is to paint the back with a thin even coat of Titebond II wood glue and let it dry. After it's dry you can use an iron and iron it on. It's best to put a piece of paper or muslin between the veneer and the iron. The heat from the iron will reactivate the glue, and it will be just like self-adhesive backed veneer.
It sounds crazy, but woodworkers (even high-end guys) have been doing this forever, and if you check back issues of Fine Woodworking, you will see comments by the Titebond company saying that Titebond II is the glue to use if you're going to use it in this manner.
