Personally I'd wait for a week. Epoxy doesn't outgas, the wood does and only until the epoxy reaches it's inital cure. But epoxy doesn't cure very quickly and the varnish won't do well until it's at least mosly cured. Can take up to a month to reach a full cure, but it's pretty much non-reactive after a week.
