I don't even make the final cutout for the cockpit until both sides of the deck are glassed. Much easier and less time consuming to glass both sides with a full length piece of glass. Much easier to make the cutout after it's glassed and glass the coaming then, to me anyway.

I make my own bias cut tape from scraps from glassing the hull/deck and use fairly short pieces to do the seams inside and out. Playing with full length pieces of tape is a royal pain. With lighter cloth for the tape the laps aren't seen or felt. No reason I can see to use precut tape, it's just too heavy a material and the orientation of the fibers is wrong, bias tape makes the seam much easier.
