There's really only one perfect way to protect yourself from possible liability and that's don't do it. If that's truly what you want in life then that's the answer. You could also not worry about it and do the things you want to do and trust that the world is a good place to be in.

If you are really worried, then you could incorporate and operate that way so a lawsuit can't touch you personally. Other than that, all these disclaimers and warnings will not prevent anything if some jerk wants to go after you over something. Personally, I think most people want to paddle boats and are good people and just want happiness in their lives like you do.
