Cutting minicell to shape is fairly easy, an electric knife cuts it pretty easily. Shaping it is normally done with stuff like dragon skin or coarse sand paper, though I like my angle grinder (it's VERY agressive though so takes serious care to use it).
You've got a seat, raising the seat on these boats even slightly will make them quite unstable.
