I really like the 8 oz polyester from Dyson, its a nice balance between "ultralight" and "very durable". Like Dave said, it heat shrinks very well making skinning an easy affair. On my recently completed canoe, the 8 oz. poly skin, polyurea coating (7 coats), rub rails (and staples, screws, etc) added right at 4 lbs to the frame.
