Wow, that is one beautiful boat. Congrats! Reading your post, it almost sounds like you are using the yellow packing tape with the fiber strands in it. What you need is the clear stuff like 3M or Scotch, but not the scotch tape like you wrap presents- the stuff that is made for packing boxes, usually sold in rolls about 2.5" wide. Epoxy doesn't stick to it, and it removes from smooth surfaces fairly easily. Any residue that is left you can clean up with goof off or with lacquer thinner. One thing to note, I recently bought some 3M tape that was kind of stretchy. It worked, but you want the hard stuff. The stretchy stuff can be a bit more tricky to get off and epoxy will stick just a little to it.
