What size and type of kayak are you looking for? There are not too many CAD models available online (at least not for free) and the model's I'm familiar with are in FREEShip. There are a lot of Greenland kayak FREEShip models available (from Harvey Golden's "Kayaks of Greenland") if that's what you are looking for. You can export the model and tweak it other 3D CAD software, but I have tried this and found that you more or less have to rebuild the model in your 3D CAD software to make it usable (which is not that difficult) since the exported model consists of numerous small surfaces (think faceted like a gem stone) which doesn't allow you to unroll the surfaces for stitch and glue, and I would expect it would be less than ideal for CNC machining.
I've got Rhino 3D, and would love to help you out if possible. I've always wanted to try something like what you describe, but never had the funds or connections to gain access to a CNC milling machine.
