If I am reading this right you plan on wetting out the deck with a 2 to 3 inch overhang that is not bonded to the hull at all but is wetted out?
If this is the case you are going to achieve extremely limited bonding of that area when you are ready to acually join the two haves. Epoxy will be set up past the point of chemical bond lets say in a day or two maybe even a week on the outside, leaving you with a mechanical bond that you will have to sand to achieve.
I hope you don't plan on just fill coating over the seam in hopes that that will bond the boat together sufficiantly, and extending varnish futher to blend?!? If so this will be the weakest area of the boat.

I have not finished my first stripper yet and maybe I am talking out of turn, but as a bit of a fiberglass "expert" this seems alot harder than just seaming the two halves when it's time and fill coating the edge away. In both cases you have to fill coat just in one case it is actually bonded together.
