Increasing the deck - at the masik - would be fine. Just a couple of inches will make a big difference. Greenland boats fit tight, in any case, and that's good for rolling and bracing.
As for an adult sized SOF, that fits a variety of paddlers, I'm going to recommend my
Chuckanut 10 or 12 designs. They are 10'x27" or 12'x30" respectively, have large open cockpits with rounded chines and wide, nearly flat bottoms. Designed to be casual, comfortable, stable and easy to use for most anyone. PM me and I can send you the building guide, if you're interested.
Tom Yost's Sea Tour 13 is another option, though not as user friendly for the uninitiated paddler.
I'll include a pic of the Chuckanut 12 - several have been built, and reports are good!
