Sounds like you see curvature at the stems.

Generally I cut a slit at the bow or stern stem (or both)a foot or two in length right down the middle starting at the tip end of the boat. You can then fold and push the two warped halves of the sliced stem together kinda til things look straight ..shave..glue..then shape and glass. You can hide the slit with a strip or 3.

Also you can sand things straight somewhat.

Be sure to read others advice I tend to be a little radical with the surgery since it's so easy to do and hide.
