You sound just like I did when I got started a year+ ago. The few tools that I needed were a japanese pull saw, power jig saw, triangle/square thing' yard stick and a rasp/file (I'm using a really cheap one).
I built a Tom Yost-style skin-on-frame kayak with very minimalist tools.
Ultimately I've added a few extras. But truly- if I could build one LITERALLY anyone can.
