Hi Doug,
By preference, I would go for foot braces/pegs. I tried using an airbag as a footrest/brace in an old glass kayak I had years back and found it unsatisfactory. It was too 'squishy'. In that boat (yes, it was a boat) I put in some FG "angle iron" and fitted a full bar footrest. Primitive but effective.
