I have done that and I find it hard to site down the keel line and chines on a multi-chined boat. Scarfing up my stringers with 2-3 pieces I keep having to work to keep them straight. Different boards want to twist differently. Being able to build the boat upside down so I can see the hull better and keep it all in alignment should be an advantage. When I am building a new design it will make spotting problems a lot easier I expect. For example on VARDO I cut a frame wrong, apparently I laid it out and then cut on the wrong side of line. Once I got the stingers in place I thought something wasn't right but I just couldn't be sure. Once I took it off the strongback and turned it upside down I could see there was a small problem. That convinced me that I wanted to build with the hull upside down.
